Yesterday I had a day to myself, which I spent writing some of my essay, researching Spring/Summer 12 trends for my final project and watching Come Dine With Me. I also decided to bake something yummy, and settled on these Double Chocolate Brownies from one of my mum's cookery books. They are absolutely gorgeous! Read on for the recipe if you're as tempted as I was!
INGREDIENTS
115g /4oz butter (plus extra for greasing)
115g / 4oz plain chocolate (broken into pieces)
300g / 10oz caster sugar
pinch of salt
1 tsp vanilla extract
2 large eggs
140g / 5oz plain flour
2 tbsp cocoa powder
100g / 3.5oz chocolate chips (I used 50g of white & 50g of milk)
- Preheat oven to 180ºC / 350ºF / Gas Mark 4.
- Grease and line a 7 inch square cake tin.
- Place butter and chocolate in a saucepan and stir over a low heat until melted.
- Remove from the heat, then stir until smooth and leave to cool slightly.
- Stir in the sugar, salt and vanilla extract.
- Add the eggs, one at a time, and stir until blended.
- Sift the flour and cocoa powder into the mixture and heat until smooth.
- Stir in the chocolate chips, then pour into the tin.
- Bake in the preheated oven for 35 - 40 mins until a cocktail stick inserted into the centre comes out almost clean.
- Leave to cool slightly.
I then dusted it with some icing sugar to make it look pretty! I'd advise cooking it for slightly less than stated and checking it, as mine didn't take quite as long.
